PINK CHEESE DIP

I used the strawberry cottage cheese idea (Strawberry Cheese Cake Minis – Published earlier) & decided to team it up with some sweet and savory flavors.. Here’s a simple recipe for delightful dip goes well with absolutely anything…Take a look!

Pink Panther - Strawberry Dip DelightAll that goes in:

500 ml of milk

3 tbsps of strawberry crush.. (Market bought/ or reduced home-made strawberry puree)

½ tbsp of castor sugar (you could add lesser, depending on how sweet your mixture is)

1 tbsp of cheese spread

½ tsp of pepper

½ tsp of salt 

Making the dip: Add the strawberry crush & sugar to the milk and set onto a flame…let it come to a boil.. the acidity in the strawberry will cause the milk to split… Drain onto a muslin cloth and keep aside..

I left a little bit of water in it so that the dip becomes a little more creamy

Mix the cheese spread, the strawberry cheese and other seasoning. Add a little milk if you find that the mixture is too thick… and you are ready to serve!!

Serving suggestions: Add a twist to your regular dips and serve with savory sides or dont shy away from ending your meal with this unique dessert side teamed with rusks, bread sticks & a hot cup of coffee; all served up with Love!

STRAWBERRY TINTED BANANA BREAD

The season of strawberries is just setting in and I thought what better way to celebrate than dedicate a few of my posts to the fruit. As I browsed the internet for a few recipes, I came upon a banana bread recipe at http://www.cookingandme.com; which was a thought starter… I said to myself, why not add a few minor twists and see how this goes… and the rest is…. well; a tasty Strawberry tinted Banana bread! :)…

All that Goes in: unnamed

1 cup all-purpose flour

1 ripened banana (mashed)

2 eggs

½ cup oil/ melted butter

1 tsp ground cinnamon

¾ tsp baking powder

½ cup sugar

Pinch of salt

Hand full of raisins

Strawberry crush 1/ ½ tbsps

 Prepping the bread baking tin: Lightly grease the bread tin with a few drops of oil/butter and dust with flour.. Pre-heat at 220 C

Making the batter: Mix the oil & the sugar… Lightly beat with a hand mixer at medium speed… Add in the eggs, one at a time.. And beat till they turn pale.. (Note: Do not overbeat). Add in the banana mash.. Mix.

Sift the dry ingredients (Flour, salt, baking powder) to ensure that they are properly mixed… Fold into the egg mixture, little at a time, lightly mixing it in…

Add the raisins and pour into the prepped tin.. Drizzle the strawberry I between and swirl around in the mix… Add the remaining batter… Add some more of the strawberry crush onto the cake surface.. Use a fork to trace out the drizzled drops into striations across the surface… Put into the pre-heated oven for around 40 mins/ till the toothpick you stick into the centre, comes out clean..

Super excited with the result of this bake!
